According to Didenko, the lack of a state-provided standard leads to a high probability of mass poisoning due to violation of sanitary standards, the use of low-quality ingredients and the lack of control over production. A particular danger, according to Didenko, is that the ingredients in rolls (fish, eggs, shellfish) are often not heat treated, which increases the risk of illness.

The deputy emphasized that the introduction of GOST will help create uniform requirements for ingredients, preparation technologies and storage conditions. For example, fish must not only be fresh, but also properly processed to prevent the appearance of parasitic and other diseases, the deputy highlighted.

Now, when preparing Japanese cuisine, it is necessary to comply with GOST 31984-2012 “Catering services. General Requirements”, which generally regulates public catering activities, but a separate standard for sushi and rolls has not yet been developed.

Business representatives had mixed reactions to the deputy’s initiative. The development director of the Yakitoria franchise restaurant chain, Alexander Muratov, supported the introduction of GOST, noting that deficiencies in quality undermine trust in the segment as a whole and the reputation of large brands. Dostaievsky’s home delivery service considered the initiative excessive and warned that it would be extremely difficult to adapt all types of rolls to the standard, since they are often prepared according to original recipes.
