Metal molds are needed only for cooking various dishes in the oven. They usually have a non-stick coating, so you can’t use a knife or metal spatula to pick up the plate. It should also not be cleaned with a coarse brush or abrasive materials. These baking forms are best suited for sweet and savory baking.

Silicone molds are flexible and lightweight. You need to bake sweet pastries and desserts in them (requires refrigeration or freezing). It is also better to choose forms with rigid frames.
