Winnow is another example of using artificial intelligence in the fight against food waste. The company installs cameras on trash cans in restaurant kitchens, allowing artificial intelligence to track which foods are thrown away and in what quantities.
With this information, restaurants can reduce parts of dishes that often go untouched or remove them from the menu permanently. Winnow claims to help restaurants reduce purchasing costs by up to 8%.
The problem of food waste is particularly important given the growing global population, which is expected to exceed 9 billion people by 2050. According to a report by the UN Environment Programme, people living in poverty spend 50 percent to 80 percent of their income on food.
