High levels of saturated fat are known to generally lead to higher cholesterol levels and an increased risk of heart disease. At the same time, there is growing evidence that cheese has a “matrix effect” that protects the human body to some extent from the negative effects of saturated fats.

Most cheeses are made using the enzyme chymosin, which curdles milk. The way the cheese is made determines how it is digested.

A 2017 study of 43 healthy volunteers in Canada found that the fat in cream cheese was digested and absorbed faster than in cheddar.

Also in 2018, scientists from University College Dublin found that cholesterol levels were significantly lower when eating cheese compared to eating its components (fat, protein and calcium) separately.
