Scientists of the North Caucasus Federal University found a way to improve the absorption of vitamins and work elements in products. They developed a new complex with vitamins associated with metals. This helps to better absorb useful substances that are important to combat the deficiencies of the body. Dairy products have been chosen for enrichment, because they occupy a significant part of the Russian diet and suitable for introducing new additives.

Supported by the Russian Science Fund, the project creates special additives with vitamins C and B3 with zinc, iron, manganese, copper and cobalt. These complexes can be added directly to sour products in production. According to Andrei Blinov, the head of the project confirmed the safety of new compounds: they do not affect the body’s blood and basic functions and at the same time do not cause allergies or irritation.

Already made the first examples of enriched sour product products, and the experimental tests were successful in the milk factory in Stavropol. Scientists believe that their development will help make daily food more useful and solve the problem of lack of vitamins and work in humans.
