A study conducted by experts from the University of Milan (Italy) revealed that in humans, when apple cider vinegar is taken orally with food (as a salad dressing), the glucose response is reduced by 31.4%.
However, this study has two limitations. The number of participants was quite small and the vinegar salad was given to people without type 2 diabetes.
Other scientific articles suggest that apple cider vinegar may aid weight loss. An article published in the European Journal of Clinical Nutrition states that vinegar causes increased satiety when consumed with a high-carb meal. In this case, the person will most likely consume fewer calories, and this combined with physical activity will lead to weight loss.
Chinese scientists from Harbin Medical University discovered how good apple cider vinegar is for the heart. But the participants in this study were rats with high blood pressure, not humans, despite the vinegar showing that it lowered blood pressure.
