On the first day of summer, Chef Dominic Crenn’s Crenn’s Bar in San Francisco was the first in the United States to serve lab-grown chicken from Upside Foods.
This became possible after alternative protein makers Upside Foods and Good Meat were allowed to sell cell culture products in the United States on June 21. So far, only in restaurants, not in stores, recalls TechCrunch.
Upside Foods’ lab chicken at Bar Crenn is tempura-fried and served with chili aioli and an edible green and floral garnish. This is the first time that you can try “meat” at the vegetarian Bar Crenn (this item disappeared from the restaurant’s menu in 2018).
Free-range chicken will be included in the restaurant’s side dishes in a series of promotions and special tastings throughout the year.
Alternative meat market experts consider the licenses obtained by Upside Foods and Good Meat as a new milestone in the development of the country’s foodtech industry. Community representatives hope that authorization for the sale of cultured protein will soon extend beyond the restaurant business.
So far, the only country where the sale of this type of product is allowed is Singapore. It is this market that many new companies in this segment are targeting.
For example, Bluu Seafood, a manufacturer of seafood products from laboratory meat, has set its sights on it. The company has raised $17.5 million to bring test-tube cultured fish to the eastern United States.
