Why does coffee sometimes taste bad?

While it’s fairly easy to make (since you basically need water and coffee beans), what makes coffee sometimes taste bad? In addition to the type of coffee you are using, a number of factors can cause bad taste. Among other things, it could be that the end product is too strong, too watery, you used poor quality coffee, or you left the coffee maker on for too long. That’s why office coffee tends to be the worst of all: the pot stays on for hours, the coffee tastes burnt, and if you make it to the end, you’re left with something as tasty as mud.

The key to a great cup of coffee is chemistry. Your coffee contains various acids, which is why bad coffee tastes bitter and sour. So what is the key to making a great cup of coffee that tastes even better than the one you bought at your favorite coffee shop? The answer is cold brew coffee..

Known in English as cold coffee, cold coffee tastes much more pleasant because sweet flavors are extracted from palatable acids, excluding bitter acids. However, when some people think of coffee made using this method, they think of a long and tedious process or specialty coffee makers. But you don’t have to invest your savings in expensive equipment for the simple pleasure of good coffee. You can easily make iced coffee at home and then mix it with milk, sugar, cream or whatever suits you best for the perfect result.

While you’re making it with this “cold” method, it’s not just about making iced coffee for summer days, you can serve it hot or cold. Plus, you can keep it for over a week without losing flavor, and it only takes about 10 minutes of your time to prepare if you know how. Here we explain step by step how to make cold coffee better and cheaper than in the canteen.

What you need

  • Whole bean or freshly ground coffee
  • Cold water
  • Sieve or fine sieve
  • cotton factory
  • crystal jar

How to make cold brew cold coffee

  1. Start by grinding or grinding coffee beans. Don’t grind them too finely, they should be somewhat grainy, like kosher salt. It is not recommended to use ground coffee (e.g. in a coffee machine) as the essence will be over-extracted resulting in a bitter drink.
  2. Mix coffee and water. Pour four cups of water into the carafe and add coffee. For regular brewing, add 1/2 cup ground coffee for a coffee to water ratio of 1:8. For a stronger drink, add up to 1 cup of ground coffee. This is a personal preference, but both Blue Bottle and Kicking Horse Coffee suggest a 1:4 ratio.
  3. Mix coffee and water with a spoon or spatula to start brewing.
  4. Refrigerate the mixture for 12-15 hours to process. You can make it in the afternoon, put it in the fridge and it will be ready the next morning.
  5. Filter the coffee and water mixture through a fine sieve covered with cotton cloth or cheesecloth to remove any particles. That’s all! You already have delicious cold coffee.
  6. Remember that this is concentrated coffee, so you should not drink it in its pure form. To serve, add water or milk to dilute. Again, this is personal preference, but it’s best to start small, with a 1:1 ratio, and work your way up. In our test, we added a vanilla bean, 1.5 cups of milk, and 1/2 cup of sugar to the mixture, and it turned out delicious. You can serve it hot or cold with ice cubes.
  7. You can store this iced latte mix in an airtight container in the refrigerator for up to two to three days. Keep in mind that when you add milk, water, or other ingredients, it shortens the shelf life of the mixture, so you should consume it sooner. But if you leave the concentrated cold coffee without adding anything to it, you can store it for about a week, or even a little longer, before its quality deteriorates.

Tips and Warnings

  • Use filtered water for best results. You can also use regular bottled water, but filtered water works best.
  • While you might be tempted to take the mixture out of the fridge before the process is complete, wait at least 12 hours, if not longer. We assure you that the wait is worth it.
  • You can add a wide variety of ingredients to make your experience even better. Experiment with condensed or evaporated milk, cinnamon, vanilla, dulce de leche, cream, brown sugar, honey, chocolate, coconut milk, almond milk… so many possibilities!
  • As we said, this is a concentrated coffee, so cold coffee tends to be stronger than traditional hot coffee. So always dilute your cup with water or milk unless you want more energy and nerves than you would like after a good coffee.
