According to the doctor, sea fish may contain helminth larvae, but the risk of infection is minimal. To prevent such risks, fish should be frozen “at least seven days at -18 degrees, for example, at least 15 hours at -35 degrees.” Also, wasabi and pickled ginger are served with sushi and rolls for prevention.

Wasabi is a spice that belongs to the cabbage family and contains isothiocyanates that kill pathogens and worm larvae, and also neutralize the effects of toxins in raw fish. Ginger helps fight bacteria and viruses, has an immunostimulating and antioxidant effect.

The doctor noted that sushi and rolls, which are safe for health, are made from salted or smoked fish. Children under 12 years old should not eat such dishes, and after this age, dishes should be thoroughly heat treated.

“Fish and seafood used in the preparation of sushi and rolls are mainly grown in special containers. Parasites usually cannot get into such reservoirs from other sources. But we should not forget about unscrupulous producers who can disrupt the storage and preparation processes of raw materials,” Utyumova said.
