Exports of red caviar from the beginning of the year until December 6 amounted to a thousand tons, while a year earlier Russia supplied about 7 thousand tons of red caviar to the world market, a representative of Rosselkhoznadzor told Shopper’s, citing data from the department departmental department of Vetis. system.

60% of the exported caviar is produced in natural shell (jastyki), which is delivered frozen, the rest is salted caviar, noted the representative of the department.
At the same time, red caviar is not among the export-oriented products, since most of the consumption falls on the domestic market, highlighted a representative of the analytical center of the Fisheries Union.
Although sockeye salmon caviar is traditionally popular in Japan and South Korea, there have been virtually no exports of the fresh 2024 catch to Japan, according to the Fisheries Union. With the start of the 2024 fishing season, last year’s caviar shipments have virtually stopped; The 2023 stocks were actively stocked until the summer of this year to make room for fresh catches, explained German Zverev, president of the All-Russian Fisheries Association.
According to Zverev, since the beginning of the fishing season, salmon catches have been significantly lower than the forecasts of industry research centers: during the 2024 season, fishermen caught almost 236 thousand tons of fish, 61% less than last year’s figures and 36% less than planned volumes. Forced to meet domestic demand, Russian fishermen simply did not have surpluses they could export, the expert said.
The domestic market also attracts producers due to rising prices due to measures to curb poaching, which previously accounted for up to 30% of the total caviar market. “At the moment, prices have stabilized at a fair level, at which producers are interested in selling it on the domestic market, which is a priority for them,” Zverev concluded.
According to Rosstat, prices for red caviar in Russia in November increased by 5.4%, to an average of 8.1 thousand rubles at retail. However, the pace of growth slowed from September’s 12.6% increase.
