According to the Parmigiano Reggiano consortium, the fake Parmesan market reaches $2 billion annually, so manufacturers decided to use high technology.

Each cheese wheel is now equipped with a p-Chip, a tiny silicone transmitter the size of a grain of sand, embedded in the casein tag. It contains a unique serial number that confirms the authenticity of the product.

Microchips are safe for consumption and can withstand the entire ripening cycle of the cheese. Even if such a chip is accidentally swallowed, it will not be activated and cannot be read remotely.

Authentic Parmigiano Reggiano is produced in only five regions of Italy (Parma, Modena, Bologna, Mantua and Reggio Emilia) and from strictly controlled milk. New technology should finally protect it from counterfeiting.
