A study led by the University of Bristol found that having a green rating next to items on the menu significantly increases the likelihood that diners will choose more sustainable options.

Cathy De-Loyd, lead author of the study, said: “Surprisingly, respondents were positive about eco-labels and 90% supported the idea…our results suggest that future policies could include mandatory eco-labels on food as a way to promote greener diets. . “

Researchers asked participants which beef, chicken, or vegetable-stuffed burrito they would order. Each burrito was accompanied by a traffic light-style green rating, and the vegan option was marked green to indicate it was the most sustainable. Of the 1,399 people, five percent more adult participants chose vegetarian options when eco-labels were included.
