In 2022, restaurant menu prices increased by 25-30%. Revenues increased from 2019-2021 level. This was announced by the Chairman of the Coordinating Council of the Federation of Restaurateurs and Hoteliers of Russia (FRiO), Sergey Mironov.
Against the background of the geopolitical situation, the cost of products and services, repair of spare parts for equipment and accessories that were previously purchased abroad, etc. have increased.
In expensive restaurants, fast food chains, there were no problems with visitors. The most tangible losses, according to Mironov, suffered establishments in the middle price segment.
Sergey Mironov suggested that in the first six months of 2023 the market will finally stabilize, dishes will adapt to new products at an affordable price, and customers will return to their usual restaurants.
The income of Russian restaurants fell after the announcement of partial mobilization. Establishments of a budget price segment (check up to 500 rubles) – by 8.3%. Cafes and restaurants in the middle segment (check from 500 to 900 rubles) earned 10.8% less. Establishments in the expensive price segment lost 10.1% in revenue.
r_keeper analysts attributed the drop in revenue to rising unemployment, emigration of the middle class, falling revenue and an increase in the number of closed stores.
