According to the researchers, there are dozens of plants that can meet the nutritional needs of astronauts. But you need to choose those that contain the maximum amount of nutrients in a minimum volume and can also be grown in a limited space.
The scientists used a mathematical model. Thanks to him, it was possible to get many salad combinations containing from six to eight ingredients. The result is this recipe: soybeans, poppy seeds, sunflower seeds, barley sprouts, kale, peanuts, and sweet potatoes.
This salad has already been tried by four volunteers. They said they could “eat it like astronauts every day for a week”.
