The scientists analyzed two popular types of beer: amber ale and Indian pale ale (IPA). They store the tin cans and brown bottles in the refrigerator for a month and then keep them at room temperature for five months, simulating various typical storage conditions. Changes were recorded every two weeks.

Amber ale was found to be more sensitive to packaging type than IPA. The concentration of certain amino acids and esters that affect the taste varied significantly depending on what was stored in the beverage. Bottled amber beer lasted longer than canned beer.

In contrast, Indian pale ale is less dependent on packaging type. Scientists explained this by the high content of polyphenols, which are antioxidants derived from hops. They help reduce the loss of amino acids.
