A group of researchers from several European countries analyzed 150 videos of commercial products marketed as “Ossetian” smooth caviar and concluded that this niche is hampered by counterfeits. The situation is sometimes called, for example, the European regulatory authorities, known as SOD, which have been impure for a long time in regard to their responsibilities. Another 21% of products, after DNA analysis, turned out to be wild sturgeon caviar, including tea and the species from which caviar is obtained, which is prohibited.
