These biotechnology startups aim to use their own milk instead of cows’ milk and offer a solution with less environmental impact. But they face the challenge of competing with the heavily subsidized dairy industry and its efficient use of cow byproducts, according to MIT Technology Review.

Replacing cow’s milk will not be easy because of its deep cultural significance and human genetic adaptations to digesting it. But Alpine Bio CEO Magi Richani advocates a technological shift. “Raising 60 billion animals a year for food is unsustainable. “We need options that are better for the environment and eliminate the risk of antibiotics and disease.”

As Richani points out, “soybeans do not transmit diseases to humans.”
