Scientists from South Ural State University in Chelyabinsk have found natural preservatives that could replace chemicals. The technology could be especially useful in African countries due to its environmental friendliness and low cost, the Russian Ministry of Education and Science reported. The study found that grape pomace extract had the highest antioxidant activity, reducing oxidation by 60-70%. The scientists also noted that the apple peel extract they tested showed an activity level of 57%, making it quite suitable for industrial use.
According to experts, apple peel extract effectively slows down oxidation in chilled, minced rainbow trout. Now scientists are trying to find the optimal balance between natural and chemical preservatives, as the latter provide higher quality. Unlike chemical ones, natural supplements such as fruit extracts are safer and less likely to cause allergic reactions.
The technology has great potential outside Russia, especially in the Global South, where it could be used to process waste such as fruit pulp and peel extracts. The Ministry of Education and Science noted that modern chemical preservatives such as potassium sorbate and sodium benzoate are causing concerns among consumers and can be harmful to health in large doses. Thus, new research opens the door to safer and more affordable solutions in the field of preservatives.
