The Belgian company Paleo presented mammoth meat cutlets to the public. This is a substance from vegetable raw materials with an injection of myoglobin synthesized from mammoth real cells. According to the technical director of Paleo, who took such a cutlet, it is much tastier than beef.
The findings of the top manager of the company partially show the presence of more aromatic compounds in this cauldron than in the beef counterpart. And myoglobin is just responsible for the “meaty” taste, which includes a high level of content.
Critics use the idea that myoglobin occupies a tiny fraction of the composition of animal flesh, and therefore they say that the patty is made “from mammoth meat” is incorrect. On the other hand, the content and the process of caramelization are directly related to flavoring. If the original plant base does not have a strong taste, then it is the fragments of mammoth meat that can give it an unusual taste that testers liked.
