The price is increasing due to increased demand in the context of a “fishless” year, Panin noted. “We planned to catch 320 thousand tons of salmon, but we caught about 230 thousand tons. At the same time, the volume of salmon caviar production is directly related to the volume of catch,” said the head of the Fisheries Union and added. that the average yield of the finished product is 4 to 5% of the weight of the fish caught.

Now the growth in costs is limited by last year’s reserves, which can be purchased at a price of 5 to 6 thousand rubles per kg, says Panin. At the same time, new salmon caviar, for example pink salmon, will cost at least 7-7.5 thousand rubles per kg, he clarified.

In turn, the vice-president of the Fisheries Association, Alexander Fomin, said that this year the price of caviar has increased at least 1.5 times: “Last year’s stocks are still sold, but they are already running out, so, How much will caviar cost? for the New Year, no one knows.”

According to Panin, caviar prices may rise another 10% until the New Year due to strong demand. The president of the Fishing Union clarified that after the holidays the price will most likely drop due to the drop in demand and the need to sell leftovers from last year.

The founder of the Kurilsky Bereg chain of fish stores, Alexey Rudko, admitted that by the New Year the cost of red caviar will catch up with black caviar and will be 10 thousand rubles per kg wholesale and 13 thousand rubles per kg retail .

According to Rosstat, cited by Izvestia, in August the price of red caviar rose by 2.3%. This is the maximum monthly increase in value since November 2022.
